A question of ANZAC

Now, here's a question that Neville will probably (I hope) know the answer to.
ANZAC is an acronym for Australian and New Zealand Army Corps., and is therefore written in capitals. I have read (somewhere) that an acronym can be written in small case and only the first letter in capitals.
I have seen ANZAC Day as Anzac Day and wonder if this is correct. And ANZAC Cove - capitals or not?
I note that the Australian War Memorial web site uses ANZAC Day and ANZAC Cove but there seems to be an acceptance of the use of Anzac Day and Anzac Cove.
