What to do with too many tomatoes.
You’ll need some tomatoes.
I know you’ve a lot.
An onion and chillies
then into the pot.
Sweat slowly on low heat
to bring out the flavour.
Add water and juice
and sugar to savour.
You’re just about finished.
Blitz all and it’s done.
The best chilli jam
in the country old son.
Chilli Jam
2 medium to large tomatoes
1 spanish onion
2 small bird’s eye chillies
250g castor sugar
400ml tomato juice
100ml water
Cut up tomatoes and onions any way, chunky / small, doesn’t matter.
Deseed the chillies (you can leave the seeds in if you like hot) and cut into small rings.
Place a good knob of butter (or marg.) into a large frying pan with the
tomatoes, onion and chilli over a low heat.
Sweat down till tomatoes are broken down and onion is transparent, not browned.
Add the water and tomato juice and simmer for about 90 minutes, stirring occasionally.
Remove from pan, add the sugar and blitz (15 to 20 seconds in a blender )
Allow to cool thoroughly, place in container and refrigerate.
