Hi Owly,
It is best to use the equipment provided when doing a walk-up. There is usually a technician who has set up the sound levels, etc.
When I am doing a show on my own or an extended performance slot, then I often prefer to use a hand microphone, except for poems that call for a lot of actions when I choose to have hands free.
However, when you do walk ups, someone might be there to adjust the height of the microphone for you and it is best to leave it in the stand as the organisers have it (sometimes they even have the mike cord linked around the stand and they get a bit edgy if people move it). Other times all walk ups are handed a mike out of the stand. The best way is to observe what the others are required to do and work with that. Also (if there is no sound technician adjusting heights or levels) it is good to observe what distance from the microphone those before you have used (as there can be a variance) and follow the ones that have come over the clearest.
