It has more flavour than guinea pig but not as dry and stringy as fillet of canine, and definitely not as tender and juicy as braised cat.

I can't imagine eating, horse, dog, cat or guinea pig and never ate our lambs - anything that has a name is strictly taboo. I remember my Dad telling that during the war in UK Horsemeat was often all they could get, and also whale meat
Horse meat is still apparently considered a delicacy in France. I will never get that
None of the above would ever pass my lips regardless of circumstances, but in life you have to do what you have to do. I totally agree with Bills comments - Australia came into its own on the back of the sheep, horses and cattle as well as the camels, they helped to forge our nation and we would never have done that without them.
